Since I mentioned that my specialty is breakfast, I had this idea that I could do something I almost never do—–share a recipe.   I don’t share because…. I’m not secretive in the kitchen—I’m just not talented.  

img_6402 I do have one breakfast recipe that everyone likes, and it’s almost impossible to screw up.   Revealing how easy it is  feels a little like pulling back the curtain and seeing the real Wizard of Oz. 

My mother wasn’t a good cook either, and this recipe came from H’s family—aside from Alli and Daniel, it’s possibly the next best thing he gave me.  We call it:

The BIG pancake

Preheat oven to 450 degrees. 

Mix in blender:

1 cup milk

4 eggs

3/4 cup white flour

When the oven is hot, put  2 T butter in a glass pie pan in the center of the oven.  When it starts to sizzle, pull out the rack and GENTLY pour the mixture into the center of the pie pan (gently so the butter spreads around the bottom).

Bake about 15-20 minutes, depending on the oven.  The pancake will rise above the edges of the pan (that’s the impressive part.)

Cut into wedges like a pie, serve with lemon wedges and powdered sugar.

Around here the BIG pancake is always a big hit–hope yours is too!

    At our house we call that a “Dutch Baby” (I don’t know why), and it’s equally good with peanut butter and/or jam and/or syrup. It feeds a crowd and never fails. Amen.

    I’m with Marla, this is like a Dutch pancake. I used to make something similar but it had apples in it and was a lot more work. I like your idea better – I’m going to try it! Thanks.

    My husband introduced me to those, his family also calls them dutch babies – and a 10″ pan works awesome. Some similar I have posted is “puff the magic pancake” which are individual versions of these. My MIL serves them with thawed frozen peaches, but my husband sticks only with the sugar and lemon and can pretty much eat the entire thing. Yum!

    Apple Pancake Dutch Baby —
    Oven baked with fresh granny smith apples and pure Sinkiang cinnamon glaze.
    Oven baked. Served with whipped butter, lemon and powdered sugar.

    Absolutely, positively one of the best things I have ever eaten.

  9. Do you mean IHOP? Or is there some other pancake house? My home version is fine for the kids but I need to try this personally—it sounds serious.

    No, Not IHOP. The Original House of Pancakes (cut and paste the link in your browser: http://www.originalpancakehouse.com). Not sure, but I think the only locations in California are in Southern California. Unfortunately, you could have gone to the one in Redondo or Anaheim when you were visiting the ex. However, it is worth the trip. We have eaten the apple pancake in Boca, Ft. Lauderdale, Aventura, Chicago, Anaheim and Redondo Beach and they are all fantastic. (Can you tell we live to eat?)
